These four dishes are perfect for a moving day lunch or dinner – they’re simple enough that anyone can make them, but satisfying enough that they’ll keep you going strong until the end of the move. Potato Chowder
Ingredients
- 8 cups diced potatoes
- 3 cans (14-1/2 ounces each) chicken broth
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1/3 cup chopped onion
- 1/4 teaspoon pepper
- 1 package (8 ounces) cream cheese, cubed and softened
- 1/2 pound sliced bacon, cooked and crumbled, optional
- Minced chives, optional
Directions
- In a 5-qt. slow cooker, combine the first 5 ingredients. Cover and cook on low for 8-10 hours or until potatoes are tender.
- Add cream cheese; stir until blended. Garnish with bacon and chives if desired.
Buffalo Pulled Chicken
Ingredients
- 1/2 cup Buffalo wing sauce
- 2 tablespoons ranch salad dressing mix
- 4 boneless skinless chicken breast halves (6 ounces each)
- Optional: Celery ribs or crusty sandwich buns, crumbled blue cheese, additional wing sauce and ranch salad dressing
Directions
- In a 3-qt. slow cooker, mix wing sauce and dressing mix. Add chicken. Cook, covered, on low 3-4 hours or until meat is tender.
- Shred chicken with 2 forks. If desired, serve on celery or buns, top with blue cheese and additional wing sauce, and serve with ranch dressing.
Smoky Hash Brown Casserole
Ingredients
- 1 teaspoon butter
- 1 package (28 ounces) frozen O’Brien potatoes, thawed
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 4 ounces smoked cheddar cheese, shredded
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Directions
- Grease a 3-qt. slow cooker with butter. Combine potatoes, soup, cheese, pepper and salt. Transfer to prepared slow cooker. Cook, covered, on low until potatoes are tender, 3-1/2 to 4-1/2 hours.
- Bake option: Preheat oven to 350°. Place potato mixture in a greased 13×9-in. baking dish. Bake, uncovered, until potatoes are tender, 45-55 minutes.
Root Beer Pulled Pork Nachos
Ingredients
- 1 boneless pork shoulder butt roast (3 to 4 pounds)
- 1 can (12 ounces) root beer or cola
- 12 cups tortilla chips
- 2 cups shredded cheddar cheese
- 2 medium tomatoes, chopped
- Optional: Pico de gallo, chopped green onions and sliced jalapeno peppers
Directions
- In a 4- or 5-qt. slow cooker, combine pork roast and root beer. Cook, covered, on low 8-9 hours, until meat is tender.
- Remove roast; cool slightly. When cool enough to handle, shred meat with 2 forks. Return to slow cooker; keep warm.
- To serve, drain pork. Layer tortilla chips with pork, cheese, tomatoes and optional toppings as desired. Serve immediately.
